Salmon Darnes In Leek Gravy Sauce


Our latest Salmon recipe merged with Bengali recipe idea; Salmon darnes in Leek gravy sauce. We love salmon fish and always buy at least 2 big salmons and store them in the freezer so that we can have whenever we want. We had no idea what the taste would like before trying this new recipe. Salmon Darnes In Leek Gravy Sauce

For 4/6 persons – Preparation time : 10 minutes – Cooking time: 30 minutes

Ingredients for frying:

800 grams Salmon fish (around 8 pieces of salmon darnes)
Salmon Darnes in Leek Gravy Sauce1 teaspoon Turmeric powder
1 teaspoon coriander powder
A pinch of Salt
3 table spoons of any kind oil

Ingredients for gravy:

5 medium sized onions finely chopped
1 teaspoon of fenugreek/cumin seed (optional)
3 tablespoons of any kind of cooking oil
5 cloves garlic finely chopped
1 teaspoon ginger finely chopped
3 teaspoons paprika powder
2 teaspoons cumin powder
2 teaspoons coriander powder
2 teaspoons curry powder
3 tomatoes finely chopped
1 leek finely chopped
Salt to taste
Finely chopped coriander leaves for garnishing
2 Green chillies (optional)

Procedure for frying:

First of all cut the salmon fish into 8 pieces and wash them well. Then strain the water to dry the fish. You can use absorbent paper to dry out the additional water from the salmon darnes. Place them in a bowl and add turmeric and coriander powder and sprinkle them with salt. Rub the spice mix all over the salmon darnes to ensure that they are properly covered with the mixture.

Heat the oil in a frying pan and add the pieces of fish. Flip them after 2 minutes. Fry the fishes in medium heat. When it becomes golden brown keep them aside in a plate.

Procedure for gravy:

In the same frying pan we are now going to prepare the gravy. Add 1 teaspoon fenugreek seeds or cumin seed. When it starts to crackle, add the chopped garlic and ginger. Fry them for a minute. Next add 5 medium sizes finely chopped onions, fry the onions until they turn golden brown. Next add the remaining spices and the chopped tomatoes. Add around 1 or 2 tablespoons of water and fry the gravy for a few minutes (the tomatoes should melt and become a sauce). At this stage, scoop out half of the sauce and put in a bowl. Add the salmon darnes over the sauce in the frying pan, then cover the pieces with the remaining sauce from the bowl. Now add the finely chopped leek on top evenly all over the pan. Add sufficient water to cover the fish for cooking. Cover with a lid and cook on low heat for 10 to 15 minutes. The leeks will absorb the spices from the gravy while cooking. When it is almost ready, add the finely chopped coriander leaves and green chilli (split in two – optional). Cover the lid so that the fragrance stays inside. Your salmon darnes in leek gravy sauce is ready to be served. You can eat it with fried rice or normal cooked rice as a lunch or dinner.
