We made these easy vegetable snacks at home the other day and the family really loved them. I had to make one lot for us with chili and the other lot without chili for our kids. It really does not take a lot of effort to do these healthy snacks at home. It is a great treat for parties especially if you have vegan friends and they will love your for these easy snacks.
Preparation time: 40 minutes
1 tablespoon French beans
1 finely chopped carrot
1 tablespoon sprouted beans
2 tablespoons chopped spring onion
3 tablespoons cabbage
1 teaspoon finely chopped ginger
1 teaspoon green chilli chopped (optional)
Salt to taste
½ to 1 teaspoon pepper powder
1 teaspoon soya sauce
1 teaspoon oil
1 egg for brushing
1 cup refined flour dough
Tomato chilli garlic sauce for serving
Spring onion leaves for garnishing
To make the dough we need 1 cup of refined flour, a pinch of salt, a tea spoon of oil, a pinch of baking powder, water as much required. This dough will be soft. Leave it for 30 minutes in a warm place and cover it with a cloth. Meanwhile you will prepare the stuffing.
First of all heat oil in a pan. Then add French beans, finely chopped carrots, sprouted green gram, spring onion, chopped cabbage, finely chopped ginger, one by one and stir well all the time. Add salt, pepper powder, and soya sauce and sauté for some times. When it will be stir fried transfer this mixture in a bowl and allow it to cool down.
Making Vegetable Snacks:
Divide the dough into 6 equal balls. Roll them out into thin flatbread and dabbing it with refined flour while making them flat. Cut them out into round shape using a round cutter. Then place about 1 table spoon of stuffing in the centre. Now fold the corners, bringing them to the top to close the gap, apply water on the corners to seal it properly.
Preheat the oven at 170°C (around 350°F). Beat 1 egg and then brush it over your vegetable snacks. Next bake it in the oven for 20 to 30 minutes. When the snacks turn golden brown you can remove them from the oven. Serve them hot with ketchup or green chutney sauce.
You can deep fry them or even steam them.
If you don’t like eggs then use melted butter for brushing the vegetable snacks.
