Special Tool: Circular cutter or apple corer

Ingredients

To macerate the apples:

  • 4 golden apples
  • 20 grams of sugar
  • 1 packet of Vanilla sugar
  • Juiced of 1 lemon

To make the dough we need:

  • 125 grams flour
  • ½ teaspoon of baking powder
  • 1 teaspoon of vegetable oil
  • 1 egg
  • 1 pinch of salt
  • 10 cl. of beer
  • 2 egg whites
  • 20 grams of sugar
  • Oil for deep frying

Prepare the batter:

Sift the flour with salt and baking powder in a bowl. Make a well in the centre of the flour and pour the 1 teaspoon of oil, 1 whole egg and 10 cl. of beer.
Work delicately to prepare a smooth batter. Cover it with a cloth and store it in a cool place for 2 hours.

Macerate the Apples

During this time, scoop out the heart and seeds of the apples with an apple corer. Peel the skins and cut them into round shapes.
Mix them with the lemon juice and sprinkle them with the normal sugar and vanilla sugar. Let it macerate until the dough is ready to be used.

Frying the Apple doughnuts:

Just when you are about to use the dough, add 20 grams of sugar to the 2 egg yolks and beat it until you get consistent foam. Incorporate this foam delicately to the dough mixture.

Heat the oil in a deep fryer at 170°C temperature. Strain the apple slices, and dip them into the dough carefully.

Pick up the apples slices covered with the dough with the help of a fork and dip them into the oil, turn them on the other side with a skimmer. Remove them when the doughnuts will turn golden color.

Strain these well with paper towels and sprinkle them with the sugar while still hot. Repeat the operation until.

Then serve it on the table and enjoy at tea time.
