Easy Potato Salad Recipe
If you are tired and want something quick then try this easy potato salad recipe.
It took me very little time to prepare this. Of course, my two daughters (7 and 12) were good helping assistants. While the youngest did the vegetable washing, the eldest helped me in cutting and chopping them. It is fun to have your kids join in your cooking experience.
This may not be the best potato salad recipe but it does taste good and we had it as our main dinner course with bread. By using simple ingredients such as potatoes, eggs and onions you can prepare delicious classic potato salad.
Well here we go…
Classic Potato Salad Recipe
4 Servings – Preparation: 20 mn
500 g of boiled potatoes
6 hard boiled eggs
3 onions (finely chopped)
A bunch of fresh coriander leaves finely chopped
Salt and pepper
2 table spoons of cooking oil
Additional ingredients (as per your taste)
1 red capsicum (cut in cubes of 1 inch)
2 tomatoes (cut in cubes of 1 inch)
1 tomato (sliced for decoration)
While you are boiling the eggs and potatoes, prepare the vegetables.
In a frying pan heat the oil and fry the onions in a low heat until they become caramelised and crispy. Keep them aside for seasoning.
Peel the boiled potatoes and cut them into big cubes. Smash 4 eggs. Put potatoes and the smashed eggs in a salad bowl.
Next add the all the other ingredients (Chopped tomatoes, capsicum, coriander leaves and the fried onions).
Add salt according to your taste and mix it delicately, paying attention not to break to much the potatoes.
Slice the other 2 eggs and decorate your salad with eggs and sliced tomatoes
While serving sprinkle black pepper with a pepper mill and enjoy it with bread. It tastes better with French baguette.
If you don’t like coriander, replace with it fresh parsley. If you wish to have it as a main course then use 1 kg of boiled potatoes.
To make this taste even better, add half a table spoon of ghee (clarified Indian butter) while mixing the ingredients. It’s fragrance will automatically open up your appetite
